These are necessary for higher end content, so any player looking to go toe to toe with Xal'ateth will be quickly knocking on an Enchanter's door.
Grab the Everlasting Enchantments specialization and get spelling like your bank depends on it. Enchanters can also craft Enchanted Crests, which can be used to upgrade the ILVL of a given piece of armor or weapon, for some extra gold.
Mana Oils also made a return in The War Within. Mana Oils are temporary- only two hours or so- oils that can be applied to a weapon. This provides a powerful boost, but this boost only lasts for a little while, so there will be a constant demand for more and more Mana Oils. It's almost as if the Enchanters planned it like that. 1 Blacksmithing

Blacksmithing has always been a useful profession in World of Warcraft, but it positively exploded in profitability during Dragonflight. While a blacksmith has to chose a focus at first, all focuses can be unlocked given enough time and focus. So get forging, blacksmith! The fate of Azeroth, and of your bank account, is on your shoulders. No pressure.
Hot items in demand by players were weapons, with the demand for armor going up as more players and characters reach end game content. Profession tools for other profesions were also likely to be in high demand and, of course, consumables were a less glamorous but reliable gold source.
Somebody has to make all the stuff other professions use to create things. If blacksmiths can make them, there's probably going to be an audience for it.
